Nicolás Ramirez Ramirez owns Finca Quejina, where he grows several coffee varieties on land that have been in his family for many years. At first, it was a forest, but it has had coffee planted for a long time now. Coffee is the only crop grown for sale on Quejina. The coffee is picked ripe and de-pulped the same day, fermented for 18–24 hours, and then washed before being dried for 3.5–4.5 days, depending on the climate.
