The region surrounding Lake Yojoa and the Santa Bárbara mountains have hot days and cool nights that can lead to very fruit-forward coffees. The humidity in this area experience lot of rain which poses challenges during the processing stage, especially drying of the coffee cherries. Controlled processing (temperature, humidity) is essential to highlight these flavours to create a clean and vibrant cup of coffee. Errors during processing can easily lead to cherries that are over-fermented, and ultimately a coffee that lacks distinct flavours and acidity.
